Anti-Inflammatory Chicken Soup

This anti-inflammatory chicken soup is a true wellness powerhouse, featuring therapeutic doses of turmeric, ginger, parsley, and oregano. These herbs and spices not only add incredible flavour but also help reduce inflammation and support overall health.

    Ingredients:

    • 1 whole chicken (or 4–6 bone-in pieces)
    • 1 large onion, finely chopped
    • 4 cloves garlic, minced
    • 3 sprigs of fresh tyme
    • 8 peppercorns
    • 4 tbsp freshly grated turmeric (or 1 tsp ground turmeric)
    • 2 tbsp freshly grated ginger
    • 1 tbsp fresh oregano (or 2 tbsp fresh, chopped)
    • 3 large carrots, sliced
    • 3 celery stalks, chopped
    • 1 cup fresh parsley, finely chopped
    • 1 cup watercress, finely chopped
    • 1 tsp dried thyme or 1 tbsp fresh thyme leaves
    • 1 tsp black pepper corns ground (to enhance turmeric absorption)
    • 8–10 cups water or bone broth (for added protein)
    • Salt to taste
    • Add fresh red chilies if you like spice

    Instructions:

    1. In a large pot, add the chicken, water or bone broth, 4 cloves of garlic, 3 sprigs of fresh tyme, 8 peppercorns and a pinch of salt. Bring to a boil, then reduce to a simmer. Cook for about 45 minutes, skimming any foam that rises to the top.
    2. Remove the chicken, shred the meat, and set aside. Strain the broth to remove impurities if needed, then return it to the pot.
    3. Add the onion, garlic, turmeric, ginger, oregano, carrots, and celery to the broth. Simmer for 20 minutes until the vegetables are tender.
    4. Stir in the shredded chicken, parsley, thyme, and black pepper. Let simmer for another 10 minutes to marry the flavours. Adjust salt to taste.
    5. Serve warm and enjoy the rich, healing benefits of this deeply nourishing soup.
